Eat This // Kurobuta Pork Belly

On a recent visit to rioja on larimer st, my taste buds got a serious treat from the restaurants' fresh bacon.  This savory starter is all about balance; from texture to flavor, the delightful blend of rich and soft is perfectly executed in this dish.



Kurobuta pork belly (which is another name for 100% pure-bred berkshire raised pork) is lightly spiced with ground toasted cardamom giving the pork an intoxicating flavor of cinnamon and ginger.  The melt-in-your-mouth pork is then paired with an earthy, madras curry-scented garbanzo bean puree which is vibrant in color and flavor.  The pale-green puree is silky and nutty which balances the richness of the pork perfectly.  A spoonful of pork jus is the final component that pulls everything together, creating pork perfection on a plate.  I hope your next trip to rioja includes an order of the fresh bacon, your taste buds will thank you.
