in November of 2012, Patxi’s opened their doors in the Cherry Hills community with
hopes of becoming the neighborhood’s go-to place for dinner out. Four months later Patxi’s has an ever growing
crowd of regulars who stop in for a glass of wine after work, appetizers with
friends or an easy family dinner.
While
Patxi’s might be known for their traditional deep dish pizzas, I think the real
stand-out is the salsiccia pizza from their thin crust options. The subtle flavors of the garlic-fennel sausage
blends perfectly with the creamy ricotta, fresh basil, gooey mozzarella and a hand-pulled
crust. The ratio of crust to tomato
sauce is just perfect and the same can be said for the ingredients on top. The flavors are spot on and the end result is a creamy blend of flavors, bite after bite.

Bonus…
a Cherry Creek location is opening next week so regardless of what location you
choose, make it a priority to go check out Patxi’s. I know I will be heading back soon for its neighborhood appeal and to taste my way through more of their menu.
